Fresh Strawberry Pie
1 9" baked pie crust (Pet Ritz deep dish)
Wash, drain, hull 1 quart strawberries
Pick ½ choicest berries and put remainder in sauce pan with 1 cup sugar,
mash with potato masher
Mix 2 T corn starch and 4 T lemon juice
Add to berries and cook until thick and transparent. Add 1 t gelatin that has been
softened in 2 T cold water. Cool mixture.
Spread 1 3 oz package of cream cheese on bottom of cooled pie crust.
Arrange berries. Pour strawberry mixture over and cool pie for 2 hours before serving.
