½ cup flour
½ t baking soda
¾ t cinnamon
2/3 c canned pumpkin
Filling (recipe follows)
Confectioner's sugar and mint leaves for garnish
Pre heat oven to 350 . Mix together sugar, flour, eggs, soda, cinnamon and pumpkin.
Line cookie sheet with foil and spray with nonstick cooking spray. Spread mixture on
foil and bake for 15 minutes.
Remove from oven and turn on to a towel immediately. (Towel may be sprinkled with
confectioner's sugar.) Roll into a long log and let cool.
Unroll cake. Spread filling onto cake. Roll cake again and wrap in plastic wrap.
Place seam-side down and chill for 3 hours for cake to set. Slice into rounds;
garnish with confectioner' sugar and a mint leaf, if desired. Makes 12 (1") slices.
Mix together 8 oz softened cream cheese, 3 T butter at room temperature, 1 t vanilla, 1 c confectioners' sugar and 1 cup chopped pecans.
