King Ranch Chicken
1 roasted chicken from Sam's
1 medium onion, chopped
1 package corn tortillas (12)
1 lb grated sharp cheddar cheese
1 T chili powder
1 t garlic salt
1 can Cream of Chicken Soup
1 can Cream of Mushroom Soup
1 can Rotel tomatoes with chilies, crushed
Pull meat from chicken in bite sized pieces.
Chop onion, cut tortillas in quarters, grate cheese.
In large bowl, place cut up chicken, chopped onion, quartered tortillas, grated cheese,
chili powder, garlic salt, Cream of Chicken Soup, Cream of Mushroom Soup and Rotel
tomatoes. Mix well.
Place in one large casserole dish or several smaller casserole dishes. Bake one hour
or until bubbly at 350º. Serves 8 if you make only one large casserole. The others
can be frozen. Thaw before cooking.
