Cheese Broccoli Casserole
1 tablespoon butter
2 packages frozen chopped broccoli
1 medium onion
1 cup Minute Rice
1 can Cream of Mushroom Soup
1 8 oz package Velveta Cheese
1/2 c milk
Cook broccoli according to package directions. Set aside. Cook rice according to package
directions. Set aside. Chop onion in small pieces and cook in the 1 tablespoon of butter
in a small fry pan. Set aside. Cut Velveta in 8-10 chunks so it will melt easier. Set aside.
In a large mixing bowl, combine cooked broccoli, rice, chopped cooked onion,
Cream of Mushroom Soup, Velveta Cheese and milk. Stir well until cheese is
about melted. Put mixture in one or two casserole dishes (depending upon how
much you want to eat). Bake at 350º for 30-40 minutes until it looks bubbly.
You can freeze the other casserole to eat at another time.
